Seasonal Vegetable and Relish Tray
This platter is displayed on a bed of leaf lettuce, and includes an assortment of fresh seasonal vegetables such as broccoli, cauliflower, carrots, grape tomatoes, jicima, celery, etc. Relish items often include black olives, marinated mushrooms, pickled okra, baby corn, bread and butter pickles, etc.
This display is combined on a large tray with a Seasonal Fruit Display, and accompanied by Assorted Domestic Cubed Cheeses.

Pasta Salad

Tri-color Rotini pasta, cooked and tossed with olive salad, diced pepperoni, gardinera mix, parmesan cheese, herbs & spices, and served chilled.

Mushroom and Red Onion Salad

Blue Cheese, Grape, Apple, and Walnut Salad

Smoked Salmon Platter
Fresh salmon filets, seasoned and pepper crusted, then smoked until flaky. Display served on a bed of leaf lettuce, with a nice presentation of cream cheese, finely diced red onions, capers, and Carr’s table water crackers.

Stuffed Mushrooms
Button mushrooms, de-stemmed and filled with a homemade crabmeat stuffing, baked and served hot in a chaffing dish.

Cocktail Shrimp
Large cocktail shrimp peeled, deveined, and boiled in seasoned water, served chilled over ice, and accompanied by fresh cocktail sauce.

Cheese Wheel – Bleu Cheese
Fresh Blue Cheese spread, consisting of aged Blue cheese, cream cheese, spices, and other seasonings, shaped into the form of a “wheel”, topped with chopped walnuts, and served with crackers.

Cheese Wheel - Cheddar

This sharp cheddar cheese “wheel” consists of sharp cheddar cheese, cream, spices, and other seasonings, and then molded into a wheel shape, topped with a raspberry sauce, and served with crackers.

Gourmet Cheese Platter
High end and unusual cheeses will be used to compose this assortment. Stilton, Monchego, Edam, Smoked Gouda, Gorgonzola, Gruyere, Ementaler, and other cheeses will be paired with an assortment of breads, crackers and appropriate fruit such as apples and pears.

Chicken Potstickers
A seasoned chicken mixture put into a wonton dumpling, lightly pan fried, and then steamed, served hot in a chaffing dish with a ginger, garlic, and soy sauce.

Shrimp Potstickers
Individual dumplings filled with a seasoned mixture of shrimp and Japanese bread crumbs, pan fried and then steamed, served with a soy, ginger, and sesame dipping sauce.

Grilled Teriyaki Skewers
Skewers of sliced beef or chicken breast, marinated, and grilled, glazed with teriyaki sauce, and served hot.

Chicken or Shrimp Satay

Skewers of chicken breast or shrimp, seasoned, and grilled, served with a Thai peanut dipping sauce.

Pinwheel Sandwiches
Thin flatbread spread with assorted fillings and meats, rolled and sliced into bite size sandwiches. These can be topped with an olive tapinade to create a hybrid sandwich/canapé.

Carving Station-Build your own Sandwich
A carving station of sliced roast beef, honey baked ham, and turkey breast, served with pre-split rolls, mayonnaise, mustard, Dijon mustard, and homemade horseradish sauce as condiments.

Beef tenderloin in place of, or in combination with other meat items.

Cocktail Party BBQ Beef Sandwich Station
A build your own BBQ beef brisket sandwich station of freshly smoked beef brisket, trimmed and chopped, sauced and served hot from a chaffing dish with pre-split potato rolls.

Pulled Pork Sandwiches
Slow roasted pulled pork is sauced with our homemade southern style BBQ sauce, and served hot with pre-split rolls.

Cocktail Meatballs
Cocktail size (small) meat balls served in our special Madeira wine sauce, consisting of a reduction of balsamic vinegar, beef stock, garlic, herbs, and other seasonings. The meatballs are served with frilled toothpicks.
